Chardonnay, Please!

Oh the magic of Blanc de Blancs. Blanc de Blancs (white of white) champagnes are characterized by clean and crisp flavors, appealingly acidic notes, subtle minerality and in some cases, a bready and yeasty backbone developed through fermentation. Blanc de Noirs is especially for lovers of more full-bodied Champagne. 

As the name suggests a Blanc de Noirs Champagne - “white from black,” can only be produced from red grapes. This means a 100% Pinot Noir Champagne. As Blanc de Noirs Champagnes contain only red grapes, these cuvées stand up to decadently rich foods, such as duck breast, spicy chicken Indian style, roast meat, foie gras or terrines. Tell me you only drink red wine, I’ll tell you to consider trying Blanc de Noirs champagne. Less alcohol than a still red and a whole lot sexier. Meunier Magic

Long considered champagne’s workhorse grape, I like to refer to it as la petite bête or the tiny beast. Pinot Meunier has been stepping into the spotlight for the past few years with it’s charming, funky and fun personality with it’s robust profile of flavors from dark fruits, such as blackberries, cassis, and black cherries to bright red fruits including raspberries and sweet cherries, as well as the scent of roses, lavender, truffles, and mushrooms. Our meunier dominant pick is Champagne Edouard Brun Cuvée Spéciale.

Bone Dry Bubbly 

Hold the sugar please! Time for a mini refresher course: Brut is dry in champagne jargon. Extra brut = extra dry aka including 6 grams of sugar (le dosage) or less.

The limited dosage in extra brut champagne allows the wine's acidity to shine through, resulting in a crisp and bone-dry taste that truly reflects the terroir in which the grapes were grown. It offers a refreshing mouthful with high acidity and minimal sweetness, making it an excellent choice for those who appreciate a clean and vibrant flavor profile.
